This drink tastes like a dessert in a glass. It’s a creamy, layered latte made with strawberry puree at the bottom, cold milk in the middle, and a light, matcha-infused whip on top. In this post (and the full video tutorial), I’ll show you how to make a slightly different version from what you'd commonly see out there. The texture is soft and foamy, and the flavour reminds me of strawberry matcha ice cream. It’s easy to make and uses ingredients you probably already have at home.

Origins of the Whipped Strawberry Matcha Latte
Whipped drinks have become a modern favourite in cafes, inspired by Korean dalgona coffee and Japanese matcha lattes. This version brings together two flavours that balance each other perfectly: sweet strawberries and earthy matcha. The contrast of pink and green has also made it one of the most photographed drinks online. It’s a fun, playful twist on the traditional matcha latte and it tastes even better than it looks.

Ingredients
For the Whipped Matcha:
2 flat tsp matcha powder (ceremonial or drinking grade)
2 tsp sugar
½ tsp vanilla extract
60 ml whipping cream
For the Strawberry Puree:
1 can strawberries (organic and in light syrup)
52 g sugar (¼ cup)
1 flat tsp pitaya powder (optional, for colour)
For Assembly:
200 ml whole milk (or oat milk for a lighter version)
Crushed ice

Instructions
Make the Strawberry Puree
Blend strawberries, sugar, and pitaya powder until smooth.
Store in a jar in the fridge for up to 1 week.
Make the Whipped Matcha
In a bowl, combine sugar, vanilla, and cream. Whisk with an electric whisk on low, then increase speed.
Once soft peaks form, add matcha powder and continue whisking until thick and airy. Do not over-whip.
Assemble the Drink
Add 60 ml (¼ cup) strawberry puree to the bottom of a tall glass.
Fill halfway with crushed ice.
Pour cold milk slowly over the ice to keep layers distinct.
Spoon or pipe the matcha whip on top.
Serve and Enjoy
Take your photos first (the layers are stunning).

Pro Tips
Chill both the milk and strawberries before making the drink.
For social media-style layers, add slightly more sugar to the puree to make it denser.
The matcha whip can also be served as a dessert mousse on its own.
